Celiac Disease is an auto immune disorder that attacks the lining of the small intestine. If it goes on undiagnosed, malnutrition, osteoperosis, other auto immunes disorders, infertility, neuropathies, and even cancer can manifest. The good news is I can control it. All I have to do is stop eating any form of wheat, rye, and barley. THAT'S IT?! Sounds easy right, but wheat is in EVERYTHING. Not just bread. I am grateful that I can control it and only have to change my diet.
So, last night we had some of our family and friends over for a "gluten filled" party so I could say goodbye to gluten for good. It was really fun we all ate until we were sick. We had pizza, cinnamon rolls, crackers and dips, oatmeal cake (one of my favorites), chocolate chip cookies and pumpkin cookies. I am grateful for those who could come. It was a lot of fun. I forgot to get my camera out to take pictures, but I did get one of me eating the first thing I craved after going gluten free the first time. This was the last thing I ate too. A cinnamon roll. Oh, how I will miss these. But, I have had my fair share the past month knowing I was probably going have to go gluten free again.
Today is the first day of the rest of my life. :)

I hope you don't quit making cinnamon rolls. Yours are really good and I am sure your kids will appreciate them once a year or so! Keep up the positive attitude.

I'm glad you found out what was going on. Its always a relief to know. And as far as going gluten free. I have a few friends who are and they still get to enjoy the yummy stuff. Look for gluten free cookies and breads at health food and specialty stores. Hope you enjoyed your last hurrah. I would of done the same thing, ate till I was sick and said goodbye. good luck. You will have to stock up on the brownies for Outback. LOL hope all goes well. I think that I am going to go and get tested too to make sure I do not have it too.
Thanks Jackie. I have to say that nothing messes with your mind more than knowing something is wrong and the Dr.'s not being able to find anything. There are a lot of places around here with gluten free food, which is nice. It's just a matter of finding out which ones taste good. :)
I'm glad that you found out what the cause was. Just what can u eat since everything has wheat in it.
Wish I could have it just till I lose 40 lbs. then go back to being able to eat normal stuff.

I can eat lots of fruits, veggies, meat, and lots of different candy. There are a lot of specialty stuff that I can eat like rice and almond crackers which are really good and really gross bread :). They have a bunch of flours made from corn, tapioca, and rice. I'll just have to learn to cook with them.
I am still learning the hard thing is that I can eat a healthy meal, but I'm not satisfied or full because I'm used to having bread with it. That's what I'll have to adjust too.

I am sorry you are going through this, but I am gald it is something you can control. You are strong and smart, and I know you'll get used to your new lifestyle and stick to it because you are a good mama! It is the pits though. Love ya!

Celeste! I haven't check your blog is a bit and wanted you to know I'm thinking of you! What a crazy thing to find out, but what a blessing you did find out and can control it!. I admire your positive attitude. I'll keep my eyes open for some gluten free recipes, too!
